Simon and Teresa Henderson turned a rundown inn into this smart property last year. Now, Stockbridge in Hampshire has a destination hotel with 34 bright rooms. Some lead straight out into the garden, while others have exposed brick walls and views of Stockbridge marshes. There’s also a three-bedroom cottage if you’d prefer a self-catered stay. Guests are spoiled for choice in terms of food and drink – the restaurant has a daily changing menu, La Hutte offers alpine-inspired dishes, and the 1882 bar has real style thanks to its excellent cocktail menu and plush design. The hotel also has a library and lounge for relaxed evenings.

Set in a restored Georgian townhouse, there are 13 boutique bedrooms with simple, minimalist décor, plus soft luxury bedding and modern en-suites with rainfall showers. Birch in Cheshunt is a hotel that calls itself a community, giving city dwellers the chance to relax with creative workshops, meditations, and special tasting menus. Back in spring, it opened an outpost in Selsdon, 30 minutes from central London. Set in 200 acres of land, the new property is a 19th-century gothic-style mansion with neutral interiors and fun pops of colours. There are 181 bedrooms – from small rooms for solo travellers to larger suites for families and groups – as well as a lido, wellness space, two restaurants, three bars, a co-working hub, activity studios and several communal spaces. There’s also an outdoor play area for children and a kids’ club for arts and crafts, superhero training and pyjama parties. You can also sign up to Birch’s membership programme which includes discounts on stays and private room hire, access to its central London club, and priority booking for ticketed events.

Deal

This beautifully renovated 17th-century farmhouse is a ten-minute drive inland from Deal. Owners Ruth Leigh and Oliver Brown have converted the Grade ll-listed building into a restaurant with rooms. As well as the Gardener’s Cottage which sleeps two, there are now four bedrooms in the main house. All are very cosy, with low beamed ceilings, comfy beds, olive green walls and interesting artwork. Food is the main talking point here – Oliver was the founder of Duck Duck Goose in Brixton and Ruth is the daughter of chef Rowley Leigh (of Kensington Place fame). The food is Italian influenced and seasonal, using the best regional ingredients available on the day – so you might eat the likes of fazzoletti with morels and wild garlic, then tuck into baked saffron rice with gurnard, mussels and aioli. There’s a short list of exciting wines, local beers and seasonal cocktails. The dining room is intimate, seating only a handful of guests but at weekends during the summer months, there’s a BBQ in the garden.

Just a six-minute walk from Ramsgate beach – the closest sandy beach to London – and with a hillside location overlooking the Royal Harbour, Albion House is the perfect spot for a seaside break. One of the most affordable options on this list, The Rose is a quirky hotel in Deal on the Kent coast. Eight rooms feature an eclectic mix of vintage patterns, bold colours and kitsch fabrics, as well as luxurious touches like hallway bars filled with treats. For a romantic staycation, book Room Four which has a super-king bed, large walk-in shower, freestanding roll-top bath, and a record player with a cool selection of vinyl. Couples can enjoy breakfast (you’re encouraged to order as much as you like) and dinner in the chic restaurant or pretty courtyard, which serves British comfort food made using quality local ingredients – think glazed cod with melted onions and pine nuts. In a historic Jacobean manor house, Boys Hall is a beautiful restaurant with rooms near Ashford in Kent. Husband-and-wife team Brad and Kristie left their hospitality careers in London to create the getaway of their dreams and have spent three years restoring the property. There are nine bedrooms, each individually designed with super king luxury beds, Egyptian cotton bedlinen, fluffy towels and the little touches to make you feel right at home. Meanwhile, the restaurant downstairs is open from Wednesdays to Sundays with a regularly changing menu that champions the best of English produce. Highlights include giant pork scratchings with spiced pear compote; lobster doughnuts; Marmite-glazed celeriac steak with chickpea chips; and millionaire hazelnut shortbread. Treatment rooms and luxury cabins on the estate are in the works, too.
