Located near the beautiful town of Saltash, Hotel Trematonia is the property to know about in Cornwall. Open for a limited time only from 25th June-13th August, this project by House of Hackney offers guests an immersive experience set in the house and grounds of the majestic Castle Trematon. With the kind of bold and beautiful interiors you’d expect from the House of Hackney team, expect signature prints throughout and bedrooms which are rich in colour and pattern. Guests can explore the local area, take long walks around the castle, or enjoy a swim in the hotel’s Indian pool which has beautiful tropical surroundings. If you’re looking for something a little different this summer, this looks seriously cool.

Bodmin Jail Hotel, Bodmin

Set to open on 17th May, Bodmin Jail has now been transformed into a luxury hotel. The property, which dates back to the 18th century and was once used to house the crown jewels during World War II, has been carefully restored with a range of stylish guest rooms. Original property features, such as oak beams and brick walls, have been reconditioned, while the on-site restaurant and bar has a cool gothic feel where guests can enjoy delicious Cornish fare made with local ingredients. For something a little different, consider exploring the Cornish and Devonshire coast by boat. Blackbird by Tregulland & Co is a luxury floating suite located on a freshwater lake in North Devon where guests can sail down to Cornwall. The Fox’s Revenge, Newquay

Having only opened its doors last February, The Fox’s Revenge has just reopened with a transformed pub garden with an 80-person tipi for al fresco dining. Run by chef Ben Ambridge, the kitchen will serve a range of barbeque classics and roast dinners cooked over fire. Dishes include pulled beef flatbread with barbecue Korean sauce; buffalo burgers with smoked crispy chicken, cheese, shredded lettuce, buffalo sauce and garlic yoghurt; tandoori smoked cauliflower; and charred watermelon and feta salad. Outdoor seating is expected to go quickly, so don’t delay making a reservation.

Set to reopen this spring with a new menu, Emily Scott returns to The Watergate Bay Hotel. The top Cornish chef will serve simple seafood and plant-based dishes such as roasted scallops, Cornish crab with brown butter hollandaise, hake with pickled samphire, and fig tarts. We can’t wait to try the summer melon curry, and Cornish sole with seaweed butter for a light al fresco lunch.

Rick Stein Coffee Shop, Padstow

Rick Stein is synonymous with Cornwall, so we were excited to learn about their new coffee bar in Padstow. Spearheaded by Charlie Stein, the launch aims to bring ethically sourced coffee from some of the best roasteries to Cornwall. Housed in their former patisserie, the building has undergone a complete redesign to include a stained-wood service bar with a bespoke zinc countertop, exposed brick walls and modern furnishings. Visitors can expect a changing menu with seasonal ingredients, with locally baked sweet and savoury pastries like cinnamon buns from Truro’s Da Bara Bakery; Reuben bagels and sandwiches filled with local crab, Cornish gouda, pork and warm apple chutney; and clam chowder with crusty rolls. There will also be ice cream from the luxury soft-serve brand Happy Endings.

Tarquin’s Gin School, St Ives

Located in St Ives in a beautiful Grade-II listed building, Tarquin Gin has just opened a gin school and shop where visitors can enjoy gin tasting sessions and shop a selection of premium spirits. Just a ten-minute walk from Tarquin’s distillery, the school offers distilling masterclasses, allowing guests to experience the process of creating their very own, wax sealed bottle of Cornish gin. A completely hands-on experience involving picking your own botanicals and firing your own copper pot still, it makes a great afternoon out. Tickets cost £85.
