Thai Rice With Broccoli
Packed with protein and low in calories, this speedy broccoli rice dish is full of texture and flavour, with lots of fragrant ginger, lemongrass, crunchy veg and peanuts. The perfect side dish or light meal in itself.

Ingredients
250g of Thai rice
350g of broccoli florets
1 (bell) pepper, thinly sliced
1 tsp of sugar
2cm piece of ginger, peeled & chopped
½ lemongrass stalk, chopped
1 garlic clove, chopped
2 spring onions, thinly sliced
50g of toasted salted peanuts
2 tbsp of sunflower oil
500ml of water
3 tbsp of soy sauce
1 small bunch of coriander, to serve
26cm frying or sauté pan
Method
Step 1
Put all the ingredients in the frying pan or sauté pan, except for the water, coriander and soy sauce. Fry for 5 minutes, stirring regularly. Add the water and soy sauce and simmer for about 20 minutes until all the water has evaporated.
