Ingredients
1 can of chopped tomatoes
1 large onion, roughly chopped
175g black olives in oil with stones removed
1 finely chopped red chilli/ or shake of chilli flakes
1 clove of garlic, finely chopped
4 boneless white cod fillets (or any other chunky white fish)
Salt and pepper to taste
Asparagus, to serve
Method
Step 1
Use a big glug of oil from the olives to soften the onions and garlic in an oven proof dish.
Step 2
Once soft, add in the chopped tomatoes, olives, chilli, salt and pepper to make a nice sauce.
Step 3
Place in the fish, skin side down, drizzle with more olive oil and a sprinkle of salt and pepper.
Step 4
Place the dish in the preheated oven (fan 180 C/ normal 200 C) for approx. 15 minutes.
Step 5
Serve with roasted asparagus baked in the oven with olive oil, salt and pepper.
