Banana Bread French Toast

French toast in itself is a decadent breakfast, but adding banana bread really jazzes up this morning treat. Feel free to use caramel sauce instead of maple syrup.

Ingredients
For the banana bread
280g of plain flour
1 tsp of baking powder
1⁄4 tsp of salt
115g of butter
150g of brown sugar
2 eggs, beaten
5 ripe, mashed bananas
For the French toast
3 eggs
3 tbsp of sweetened condensed milk
1 tsp of vanilla extract or paste
2 tbsp of butter
1 loaf of banana bread
Icing sugar for dusting
Maple syrup
1 loaf pan (23cm x 13cm), lightly greased
Method
Step 1

Preheat an oven to 180°C (350°F) Gas 4. Prepare the loaf pan.

Step 2

In a large bowl, combine the flour, baking powder and salt. In a separate medium bowl, cream together the butter and brown sugar. Stir the eggs in one at a time and add the mashed bananas until combined. Add the banana mixture to the flour mixture and stir with a wooden spoon until mixed together. Pour into the greased loaf pan. Bake for 1 hour, or until a cocktail stick inserted into the centre comes out clean. Let it cool for 5-10 minutes and then turn it out onto a wire rack.

Step 3

In a small-medium bowl, beat the eggs, sweetened condensed milk and vanilla with a fork. Set aside.

Step 4

Melt the butter in a large frying pan over a medium heat. Slice the banana bread into 4 thick slices.

Step 5

Dip each slice into the egg mixture and place into the hot frying pan. Cook on each side for 1-2 minutes until golden brown. Plate and dust with icing sugar. Serve with a side of maple syrup.
