Apple & Blackberry Crumble Bars

If you're in the mood for a treat this weekend, these apple and blackberry crumble bars couldn't be easier to make. Sweet, crisp and chewy, they're the perfect dessert or mid-morning snack for this time of year.

Bramley cooking apple, peeled, cored & cut into small cubes (approx. 100g)
150g of frozen blackberries
100g of oats
200g of light brown sugar & 1 tbsp for filling
250g of plain flour & 1 tbsp for filling
1 egg
125g of unsalted butter, melted
½ tsp of mixed spice (optional)

20cm square tin, lined with parchment paper
Large mixing bowl
Small mixing bowl

Method
Step 1

Preheat the oven to 180°C (Fan).

Step 2

In the small mixing bowl, combine the cubed apple and frozen blackberries with 1 tbsp of light brown sugar and 1 tbsp of flour. Set to one side.

Step 3

In the large mixing bowl, combine the oats, light brown sugar, flour and mixed spice (if using) with a spoon.

Step 4

Mix in the egg and melted butter with the spoon, then get your hands in the bowl and bring the mixture together until it forms clusters.

Step 5

Pour two-thirds of the crumbly mixture into the prepared square tin and lightly press down with your fingers to create an even layer.

Step 6

Spread the apple and blackberry mixture on top, then sprinkle the remaining third of crumble mix over the top, don’t worry if there are gaps, you want to see the fruit coming through.

Step 7

Place in the oven and bake for 35-40 minutes until golden on top and the apple is cooked through. Leave to cool before portioning into 8 bars and serving.
