Food Maths: Wahaca Sweet & Smoky Taco Kit

What’s not to love about Wahaca’s Sweet & Smoky taco kit? With it, you can make the easiest enfrijoladas, a quick chicken dish, and a veggie slaw full of nutritional goodness, says food writer and SL contributor Chloe Scott-Moncrieff. Here, she shows us three easy meals to make this week…

HERO INGREDIENT: Wahaca Sweet & Smoky Taco Kit

SUPERMARKET: Waitrose

Enfrijoladas

INGREDIENTS

METHOD

  1. Simmer the broad beans for 3 minutes. Drain, saving 2-3 tbsp of the cooking water. 

  2. In a blender, add the beans, fresh coriander and 1-2 tsp of the readymade spice blend from the kit. Blitz. 

  3. Fry the tortillas from the kit gently for a minute so they’re warm. Spread half the bean salsa across them. 

  4. Meanwhile, quickly scramble the eggs, being sure not to overcook them. 

  5. Fill the tortillas with the egg, feta and a dash of finely chopped onion. 

  6. Roll up, placing them in a row in a serving dish. Spoon a decent dollop of the bean salsa over each roll. 

  7. Garnish with sour cream, avocado, finely chopped red chilli and plenty of herbs if you wish.

‘Dinner In A Hurry’ Chicken 

INGREDIENTS

METHOD

  1. Cook the chicken for 25 minutes in one pan until it’s cooked, adding the spice blend mix from the kit. Add 1 tbsp of water if needed. 

  2. Follow the instructions on the back of the packet to prep the tortillas. 

  3. When the chicken is cooked, remove any bones and chop into chunks. 

  4. Place the chicken in the tortillas, using them as tacos, then add the tamarind salsa from the kit. 

  5. Add a generous scattering of blue cheese, lettuce and lime wedges. Finish with the hot sauce.

Mozzarella Slaw Tacos (V)

INGREDIENTS

METHOD

  1. Start making the coleslaw by finely chopping the red cabbage and onion. 

  2. Finely grate in the lime zest and squeeze in the juice. Stir, then add the mayo and 1 tbsp of the kit’s spice blend. Season with black pepper and salt. 

  3. For the tacos, follow the instructions on the back of the packet. When they’re golden, add the slaw, and the slivers of mozzarella. 

  4. Embellish further with 1 tsp of the included salsa per tortilla and any herbs you wish.
