Cherry Thyme Sour
Make sure your home-made syrup uses dark, rich, soft cherries and fresh thyme for extra flavour. Drop a couple into each glass for extra cherry popping.

Ingredients
60ml of gin
30ml of triple sec
30ml of freshly squeezed lime juice
120ml of cherry & thyme syrup
1 x egg white
A dash of Angostura bitters
Method
Step 1
Shake the gin, triple sec, lime juice, syrup and egg white vigorously over ice. Strain into a chilled glass, add a couple of drops of Angostura bitters and garnish with a sprig of thyme.
