Cavolo Nero, Noodle & Miso Stir Fry
This quick stir fry dish couldn't be any easier. Try adding sliced chicken breast for a non-vegetarian option, or serve with rice instead of noodles.

Ingredients
1 tbsp of toasted sesame oil
2 carrots, cut into matchsticks (300g)
200g of broccoli florets
75g of cashew nuts
200g pack of sliced Cavolo Nero
1 tbsp of miso paste (25g)
1 tbsp of honey
1 tbsp of light soy sauce
2 tbsp of Japanese rice vinegar
200g of thick rice noodles
Method
Step 1
Heat the oil in a large frying pan and fry the carrot, broccoli, cashews and Cavolo Nero for 5 minutes.
Step 2
Blend the miso paste with the honey, soy, vinegar and 2 tbsp of water and add to the pan. Cover and cook for 5 minutes.
Step 3
Meanwhile, cook the noodles in boiling water for 5 minutes, drain and divide between 4 bowls, top with the miso stir fry and serve.
