Ingredients
1 slice of sourdough bread
½ avocado, mashed
1 clove of garlic
Juice of ½ lemon
1 tbsp of feta cheese
2 tbsp of pomegranate seeds
15g (1 handful) of rocket
½ tsp of Dijon mustard
½ tsp of olive oil
Salt & pepper, to taste
Method
Step 1
In a bowl mash the avocado together with half the lemon juice, crushed garlic, and salt and pepper to taste.
Step 2
Toast your sourdough bread and top with the avocado mixture, crumbled feta and pomegranate seeds.
Step 3
Mix together the Dijon mustard, olive oil, and remaining lemon juice in a large bowl and toss the rocket in this to coat evenly. Serve with the avocado toast, topping with extra seasoning if desired. A quick and delicious way to start any day.
