Get Your Greens Soup

This powerhouse of a soup is everything a green soup should be: vibrant, herby, fragrant and incredibly nourishing. Loaded with broccoli, kale, ginger and garlic, it’s a go-to on those days when you need a boost of vitamins to amp up your immune system. It’s really flexible, so feel free to interchange the greens and use whatever you have on hand.

Ingredients
400g of broccoli, stalk included
1 tbsp of vegan butter or coconut oil
1 onion, sliced
2 garlic cloves, minced
5cm (2in) piece of fresh ginger, peeled and minced
150g of trimmed kale leaves, roughly chopped
40g of spinach leaves
20g of fresh parsley, roughly chopped
10g of fresh mint, roughly chopped
Juice of 1 lemon
800ml of vegetable stock or water
½ tsp of sea salt
60ml of full-fat coconut milk
Method
Step 1

Slice all the broccoli into 5cm (2in) chunks, including the stalk. Melt the butter or oil in a large saucepan over a medium heat, add the broccoli and onion and sauté for 5 minutes until starting to soften. Add the garlic and ginger and cook for 2 minutes more.

Step 2

Add all the remaining ingredients aside from the coconut milk and simmer for 20 minutes, until the broccoli is soft and you can mash it against the side of the saucepan. Add the coconut milk and blitz in a food processor or with a stick blender until really smooth.
