Harissa & Tomato Bruschetta

A great summer starter or light snack, the cherry tomatoes in this dish are chucked into a hot frying pan with olive oil and fragrant harissa and fried until they just begin to burst. Spooned over cool yogurt and garlic toasts – simple and delicious.

Ingredients
8 slices of sourdough or crusty white bread
1 garlic clove
Large pot of Greek yogurt
400g of cherry tomatoes
2–3 tbsp of harissa paste
1 lemon
1 small bunch fresh basil
Olive oil
Salt & black pepper
Method
Step 1

Toast the bread. Meanwhile, peel the garlic clove. As each piece of toast is ready, rub it on one side with the garlic, then spread with a big spoonful of Greek yogurt and put onto plates.

Step 2

Get a large frying pan over a super high heat and drizzle in a good glug of olive oil. Chuck in the cherry tomatoes and season with salt and black pepper. Fry for 2 minutes until the tomatoes just begin to burst. Stir in the harissa paste to taste, then remove from the heat.

Step 3

Spoon the hot tomatoes over the cool yogurt toasts, making sure to spoon over all the flavoured oil from the pan too. Finely grate a little lemon zest over each plate of bruschetta and tear over a few basil leaves to finish.

SPEED HACK: Get everything ready with the toast and put on serving plates before you’ve even started frying the tomatoes.
