Five Easy Puddings To Try Now
1. Blood Orange Syllabub
INGREDIENTS

300ml of double cream

70g of caster sugar

Zest of 1 unwaxed lemon

2 tbsp of brandy, sherry or whisky

Juice of 3 red oranges
-
Mint leaves (optional)
METHOD
- Mix the orange juice with the sherry or whatever spirit you are using. Stir in the caster sugar.
- When dissolved, add the double cream gradually, whisking as you pour, continuing until they become soft peaks.
- Transfer to glasses, finely grate over lemon zest.
2. Microwave Treacle Sponge
INGREDIENTS

50g of butter, softened

100g of caster sugar

1 egg
-
100g of plain flour
-
1 tsp of baking powder
-
3 tbsp of Golden Syrup
METHOD
- In a large bowl, whisk the butter and sugar with the egg. Add flour and baking powder.
- In a microwavable bowl, pour in enough Golden Syrup to sit at the bottom. Spoon in the cake mix.
- Pop the lid on and microwave for 5 minutes.
- Leave to stand then turn onto a dish and serve with vanilla ice cream.
3. Cheat’s Cheese Cake
INGREDIENTS

150g of cream cheese

150ml of double cream
-
100g of frozen berries, defrosted
-
½ packet of ginger biscuits, crushed
METHOD
- Whip the cheese with the double cream until fluffy.

Build up layers of biscuit, cream mix and berries in individual glasses.
4. Greek Yoghurt Banana Ice Cream
INGREDIENTS

3 bananas
-
3 tbsp of Greek yoghurt
-
1 tbsp of honey or maple syrup
-
A pinch of cinnamon or drop of vanilla essence (optional)
METHOD
- The night before: using a blender, whiz all the above ingredients.
- Pop into the freezer.
- Remove from the freezer to soften and serve.
5. Sticky Ginger Traybake
INGREDIENTS

180g of self-raising flour
-
110g of butter
-
110g of muscovado sugar
-
1 tsp of bicarbonate soda
-
1-2 tsp of ground ginger
-
300ml of milk
-
150g of stoned dates, finely chopped
-
3 tbsp of Golden Syrup
-
80g of stem ginger
-
2 eggs
METHOD
- In a pan, heat the sugar, butter and then pour in the milk and dates.
- When cool, mix with the flour, bicarbonate of soda and everything else.
- Butter a 20cm long tray, pour in. Bake for 40-50 minutes.

Cook until it is sticky inside but not wet.
