Cheese, Sweetcorn & Spinach Muffins
If you don’t have spinach or sweetcorn to hand, experiment with your favourite fillings – chopped red pepper, onions or cubed ham make for delicious alternatives. You can also add finely chopped chilli or chilli pepper flakes for a spicy kick.

Ingredients
175g of plain flour
1 tsp of bicarbonate of soda
150g of pre-grated cheese
50g of baby spinach, shredded
100g f tinned sweetcorn, drained
2 eggs
150g of unsalted butter, melted
150ml of milk
Method
Step 1
Preheat the oven to 180°C.
Step 2
Combine the flour, bicarbonate, cheese, spinach and sweetcorn in the mixing bowl.
Step 3
Add the eggs, melted butter and milk and mix it all together.
Step 4
Divide the batter evenly into the muffin cases.
Step 5
Bake for 20-25 minutes until risen and golden. Serve warm.
