Soft Gingerbread Cookies
Serves: 12
Time: 20 Minutes
INGREDIENTS:
- 125g of unsalted butter, softened
- 160g of dark brown sugar
- 1 egg
- 1 tsp of vanilla essence
- 225g of self-raising flour
- 1.5 tsp of ground ginger
- 1.5 tsp of ground cinnamon
- Pinch of all spice
- Large pinch salt
METHOD:
- Preheat the oven to 180°C/Gas mark 4. Line 2-3 baking trays with baking paper.
- Beat the butter and sugar together with an electric whisk on medium until creamy, then add in the egg and vanilla and beat again.
- Add in the flour, spices and salt and beat on the lowest speed, until a dough has formed.
- Use a small ice-cream scoop or roll the dough into walnut-size balls and add to your baking trays with a good amount of space around each one to allow them to flatten and spread.
- Transfer to the oven and bake for 8 minutes. When done, leave to cool for 10 minutes to set, then transfer to a wire rack to cool further or serve immediately to enjoy warm. They will keep in an airtight tin or container for up to a week.
Vegan Gingerbread Baked Oats
Serves: 8
Time: 30 Minutes
INGREDIENTS:
For the baked oats:
- 1 banana
- 250ml of plant-based milk
- 2 tbsp of golden syrup or molasses
- 1 tsp of vanilla essence
- 120g of oat flour
- 1 tsp of ground cinnamon
- 1 tsp of ground nutmeg
- 1 tsp of ginger
- 1 tsp of baking powder
- Pinch of salt
For the frosting:
- 250ml of plant milk
- 100g of cashew nuts
- 1 tsp of lemon juice
- 1 tsp of vanilla essence
- 150g of chopped pecans
METHOD:
- Preheat the oven to 180°C/Gas mark 4.
- Take a large baking dish and mash the banana in it.
- Mix in the plant milk, golden syrup or molasses, and vanilla essence. Whisk to combine.
- Mix in the dry ingredients: oat flour, cinnamon, nutmeg, ginger, baking powder and salt.
- Bake in the oven for 25-30 minutes until soft and fluffy.
- To make the frosting, blitz the ingredients (minus the pecans) in a NutriBullet or blender until thick.
- Once the baked oats have cooled down, spread the frosting on and top with chopped pecan nuts.
Classic Gingerbread Men
Serves: 8
Time: 30 Minutes
INGREDIENTS:
For the biscuits:
- 200g of plain flour
- 85g of brown sugar
- 30g of honey
- 50g of soft butter
- ½ tsp of ground cinnamon
- ½ tsp of ground ginger
- ¼ tsp of salt
- ½ tsp of baking soda
- ½ egg
For the icing:
- 150g of icing sugar
- 1 egg white
- ½ tsp of lemon juice or vinegar
METHOD:
- Preheat the oven to 180°C/Gas mark 4.
- Mix the flour, sugar and butter in a bowl. Add in the egg and spices, and combine into a soft dough.
- Refrigerate for one hour.
- Roll the dough out onto a floured surface. It should be 3cm thick. Then use a gingerbread cutter to cut out the shapes.
- Bake in the oven for 12-15 minutes then transfer to a cooling rack.
- To make the icing, whisk the egg white for a couple of minutes, then add half the icing sugar. Whisk to near soft peaks, then add in the rest of the sugar and whisk until you have velvety icing.
- Transfer to a piping bag and decorate the gingerbread.
Gingerbread Latte
Serves: 1
Time: 5 Minutes
INGREDIENTS:
- 60ml of milk
- 1 tbsp of brown sugar
- ¼ tsp of cinnamon
- ¼ tsp of ground ginger
METHOD:
- Add the milk into a milk velvetiser or mug. Add in the spices and sugar, and heat – or use a milk frother to froth up hot milk.
- Make a double shot of espresso in a mug and top with the cinnamon milk.
- Serve with a pinch of ground cinnamon.
Gingerbread Brownies
Serves: 12
Time: 5 Minutes
INGREDIENTS:
- 100g of unsalted butter
- 2 tbsp of brown sugar
- 2 tbsp of golden syrup
- 1 can of sweetened condensed milk
- 100g of plain flour
- 2 tbsp of cocoa powder
- 1.5 tsp of baking powder
- 2 tsp of ground ginger
- 1 tsp of ground cinnamon
- 1 tsp of pumpkin pie spice
METHOD:
- Preheat the oven to 180°C/Gas mark 4.
- Line a 9in x 9in baking dish with parchment paper.
- Add the butter, brown sugar and golden syrup into a bowl. Microwave for 30 seconds, mix with a spoon, then pop it back in for another 10-15 seconds until melted.
- Pour the condensed milk into a bowl and add in the flour, cocoa powder, baking powder and spices. Mix until the wet ingredients are fully incorporated.
- Bake for 25 minutes or until a knife comes out clean. Allow to cool for 6-7 minutes before slicing into squares and enjoying!
