Vanilla Pudding Coffee
Serves: 1
Time: 30 Minutes
INGREDIENTS
For The Vanilla Pudding:
- 100g of powdered milk
- 30g of sugar
- 20g of icing sugar
- 50g of cornflour
- 2 tsp of vanilla essence
- Pinch of salt
For The Coffee:
- 3 espresso shots
- 100ml of double cream
METHOD
- To make the vanilla pudding, put all the ingredients into a small saucepan and warm over a low heat, stirring constantly, until the mixture comes to the boil. This will only take a couple of minutes.
- Remove from the heat and add the vanilla, stirring well.
- Pour into a serving dish and chill until slightly thickened.
- Pour a third of the mixture into a glass and top up with ice cubes.
- Make the espresso and add this into the glass.
- Whip the cream for a few minutes until it thickens slightly, then pour it over the coffee.
- Stir with a spoon and enjoy.
Autumn Cloud Coffee
Serves: 1
Time: 5 Minutes
INGREDIENTS
- 1 tsp of caramel syrup
- 1 scoop of vanilla powder
- ½ tsp of ground cinnamon
- 250ml of milk of choice
- 3 espresso shots
METHOD
- Add the syrup, vanilla powder and cinnamon to a mug.
- Heat the milk slowly, then add to the mug.
- Use a milk frother to froth up the mixture.
- Make the espresso shots and put them into a separate mug. Top with the frothy milk mixture.
Gingerbread Coffee Cubes
Serves: 1
Time: 5 Minutes
INGREDIENTS
- 500ml of coffee
- 250ml of milk of choice
METHOD
- Make 500ml of coffee in a cafetiere.
- When cool, place into silicone gingerbread moulds and freeze overnight.
- Pop a few frozen gingerbreads into a glass and top up with cold milk.
Peppermint Mocha Latte
Serves: 1
Time: 10 Minutes
INGREDIENTS
- 2 espresso shots
- 250ml of milk of choice
- 1 tbsp of cocoa
- 1 candy cane, cut into pieces
METHOD
- Make two espresso shots in a coffee mug.
- Put the candy cane and milk into a metal mug and froth; heat up the milk first if using a handheld frother.
- Add the cocoa and froth again.
- Take out the candy cane pieces, then add the chocolate milk to the espresso and serve hot.
Autumn Affogato
Serves: 1
Time: 5 Minutes
INGREDIENTS
- 1 scoop of vanilla ice-cream
- 1 scoop of chocolate ice-cream
- 2 espresso shots
- Whipped cream, optional
METHOD
- Put the ice-cream into a mug and top with two espresso shots from a coffee machine or cafetiere.
- Top with whipped cream for a treat.
Instant White Chocolate Mocha
Serves: 1
Time: 5 Minutes
INGREDIENTS
- 100g of white chocolate chips
- 1 tbsp of instant coffee
- 150ml of milk of choic
METHOD
- Heat the chocolate in a bowl over hot water or slowly in the microwave.
- Dip your glass in the chocolate to create a white rim.
- Put the remainder of the chocolate in a separate glass with the instant coffee and 100ml of hot water. Stir to combine.
- Use a frother to froth up the mixture, then add the milk. Froth again.
- Add a large ice cube into the glass with the espresso shots, top up with any leftover milk mixture.
